I moved back to Buffalo in June 2022 to help care for my mom, as she was no longer driving, which was the biggest issue for her at the time. I soon realized moving home was the best decision I ever made... for my mom, for me and for Piggie too.
Recently, my mom craved a nostalgic rice recipe my Grandma DiNatale made when my mom was a kid. I remembered it well as Grandma D used to make it when I was growing up and it was so yummy.
As a little background to the dish, Abruzzi is the region in Italy where my grandpa came from and it is a mecca of amazing Italian dishes and food.
So, I went digging through all the family recipes when I found the handwritten recipe for the rice dish my mom wanted. I was super psyched to give it a go. I gathered all the ingredients and cooked it for my mom. It was the least I could do for the 87 (almost 88) year old bird.
I made this nostalgic rice dish and it brought back so many memories for my mom and myself too… I will definitely be making this comforting dish again! It is sooooooo good!
Now, my mom quickly became accustomed to being catered to in every way (only child syndrome). In fact, for the past year I’ve been making all the meals and her highness couldn’t be more pleased. Actually, I’m glad to cook for the legendary Grammaline (aka my mom). Cooking is something I’ve gravitated to over the past years. I am really enjoying exploring in the kitchen.
